The NutriEV project aims to research nutrient-enriched extracellular vesicles (nutriEVs) derived from both raw and fermented foods. Investigating the components of nutriEVs, including glycans, will provide insights into their mechanisms for delivering nutritional components to cells

Project research
The project investigates the complex interactions between nutritional extracellular vesicles, gut cells, the microbiome, and their vesicles, aiming to understand their role in gut health, obesity, and metabolic regulation through in vitro, in vivo, and clinical studies.
Extracellular vesicles have been identified in sweat, exhibiting unique molecular signatures that enable non-invasive biomonitoring technologies to assess nutritional impacts.
The successful completion of the NutriEV project could present promising translational opportunities for both the food industry and medical research.
